St Patrick’s Day: It’s A Long Way to The Tipperary But Our Heart’s Right There

P1010677The Tipperary is the oldest Irish pub in London. Steeped in Irish heritage, it has been a haven for Wild Geese for hundreds of years and a remarkable taste of home. And now we’ve flocked behind the bar! Yes, The Wild Geese Irish Whiskey is now served in London’s oldest Irish pub, just in time for St Patrick’s Day!

The Tipperary was first built in 1300, on the side of a monastery where the monks brewed ale.

In 1605 it was transformed into ‘The Boar’s Head’. It’s stood the test of time, surviving the Great Fire of London having been built of stone and brick, rather then wood.

It came under Irish ownership in around 1700, becoming the first Irish pub outside of Ireland. It was fitted out in traditional Irish style, including a clock by Thomas Tompion.

Following the First World War, the printers returning from the war had the pub named ‘The Tipperary’, inspired by the war song, ‘It’s A Long Way’, and the name remains today.

Today The Tipperary is run by Steve Rowlands, who has a huge passion for fine spirits. The interior retains the original Irish character and behind the bar now sits The Wild Geese Irish Whiskey Collection. It’s a great place to enjoy The Wild Geese this St Patrick’s Day!

Nose: A light, berry, sweetness at first. Oak develops followed by barley malt, digestive biscuits and vanilla.

Palate: A cool and refreshingly sweet early palate. Giving way to a richer sweetness with undertones of manuka honey, aniseed and a slight citric tang.

Finish: There is a refreshingly sharp oak present at the very end, preceded by more cream vanilla.

Overall: A delightful Irish blend that is a superb example of a sweet and vanilla rich whiskey.

0.5 oz Simple Syrup
2 Dashes Chocolate Bitters
Grated dark chocolate to garnish

Shay is one of the star barmen at Elixir in San Francisco. He mixed up a sensational cocktail using our Classic Blend – The Tipperary. It’s a classic cocktail with a Wild twist.

3/4 oz. sweet vermouth
1/2 oz. green Chartreuse
Ice cubes

Tools: mixing glass, barspoon, strainer
Glass: cocktail
Garnish: lemon twist

Combine ingredients in an ice-filled mixing glass and stir. Strain into a chilled glass and garnish.

‘It’s nice to have a range of expressions in an Irish whiskey. I really enjoy the Single Malt in particular. The Classic Blend I’ve made in a lot of different cocktails, it mixes really well and holds up as a nice hot whiskey. All in all I would say that I’m really impressed with the line’
