Brand New Video: ‘The Beginning’

We’re very excited to share our new video with you.

The Beginning’

Ireland was torn by injustice and natural disaster.

The soldiers and refugees who were forced to set sail
on ships for other lands became know as
The Wild Geese.

Through oppression and famine they created a beautiful dream
Freedom for Everyone.

Elixir and The Wild Geese Celebrate The Mission Irish

Elixir, found in San Francisco’s Mission District and listed as one of the top 25 cocktail bars in the world, has listed us on their celebratory cocktail menu.

To celebrate the 75th anniversary of the Golden Gate Bridge, H. Joseph Ehrmann, who runs Elixir, constructed the ‘Golden Gate Cocktail menu’ and our Rare Irish Whiskey has been included in celebrating the local Irish people who helped build San Francisco’s most famous landmark.

He was kind enough to give us some insight into why he chose The Wild Geese.

What attracted you to using The Wild Geese?

I tasted the full line up at Whiskies of the World and found the Rare bottling to be exceptionally rich and complex for an Irish whiskey. It made an excellent sipper, but I immediately started to think of ways to enhance it in a cocktail

Generally, with a spirit as dominant and flavourful as that, i want it to shine, so simply adding a few touches is enough and the Old Fashioned formula is perfect for that. When a barrel aged spirit shows me deep dark chocolate notes, I like chocolate bitters to highlight that and using brown sugar further enhances the richness. It’s a simply cocktail really, which is part of it’s beauty.

Can you provide a few details about why you chose to name it ‘The Mission Irish’?

Elixir is the second oldest saloon location in San Francisco and had a long run of Irish proprietors in the early days, as well as a rich Irish community around it. The Mission District used to be teeming with Irish and a good number of them actually built the Golden Gate Bridge. So this drink is a nod to that heritage at Elixir and in san Francisco.

Like our visit to Glasgow, this shows that you get really creative with The Wild Geese.

I enjoy the line extensions of this brand because it shows the many possibilities of Irish Whiskey, a category that is too often generalised for one flavour profile. These are some delicious bottlings.

New Cocktail From San Francisco – CASTLE BRIGHT

A few weeks ago we were in Glasgow, showing local bartenders The Wild Geese Collection. You can see some of the coverage in the link below.

They created some superb recipes, and for more information on this, check out our Facebook page. News has come from across the pond that bar tenders in California are now doing the same!

Black Market Liquor Bar in Studio City, California, has featured our Rare Irish in ‘The Castle Bright’ cocktail.
