The Wild Geese Collection is produced using an Extended Double Distillation
making for a much smoother product with more character, as can be seen from the numerous accolades and awards our whiskeys receive.
The key to our super premium whiskey lies in the blending: creating the right balance between robust and spicy malt and light smooth grain. The Wild Geese Collection also includes a superb Single Malt.
Our whiskey is matured in single use white oak barrels that have previously
been used to make bourbon – but only once. These are some of the most expensive
barrels that can be used to mature whiskey. Barrels impart flavour and colour to the whiskey during the maturation process. The less times a barrel has previously been used, the more flavour and character will come through in the whiskey.
The Age Statement
The quality of whiskey is not determined by its age but by the quality of all the ingredients, the techniques and processes used. A cask of whiskey is unique and its flavour changes over time. Whether this change is for the better or not is a matter of personal taste.
The use of an age statement was first introduced in the 1960′s as a marketing device. Every cask of whiskey used in a blend or a single malt recipe must be the same age or older than that stated on the label. As a result, an age statement gives the impression that age is more important than quality and limits the array of whiskeys a blender can mix together. Many factors not just age determine the quality of a whiskey, such as the wood of the cask, the ingredients and the distillation process. The blender also plays a very important role, just like a conductor in an orchestra, blending different characteristics and flavours, to create a whole that is greater than the sum of its parts.
It is now more and more common to see whiskies without age statements in the super premium segment, just like The Wild Geese Collection, the recipient of over sixteen awards and three times voted ‘Best Irish Whiskey’.
Maturation is a process where the whiskey is left in an oak wood cask over a number of years to take on flavours from the wood. Hence the importance of the quality of the barrel. Over time, some of the spirit evaporates from the cask. This is known as ‘the angel’s share’.
Ireland’s temperate climate is ideally suited for maturing whiskey. The result is a stable maturation process. As the daytime temperature rises, they whiskey expands and is forced into the wood, which is why the quality of the wood is so important.
As it cools again in the night, the maturation process draws the whiskey out of the wood, bringing with it colour and flavour.

Our brand was launched in 2001 (UK) / 2008 (USA), telling the true story of those who took the name ‘The Wild Geese‘, exiled from Ireland with nothing but hope and dreams of returning home. This is a timeless and unique story. Though it began in 1691, it lives on through the millions of Irish ancestry.

Whiskey can differ in colour to the type and age of the wooden casks used for maturation. Whiskey can also go cloudy with a little water, though this is perfectly normal and natural.
Hold the whiskey up to your nose and take in the aromas. What do the aromas remid you of? It’s likely you will pick up a number of ‘notes’, not just one. Adding a little water opens up the whiskey, often releasing different aromas. There are no right or wrong answers.
Take a drink of the whiskey and let it flow around your mouth so that it reaches all parts of the tongue. Hold it in your mouth for a few seconds. How similar are the flavours to the aromas? Pay close attention to the taste. This is called ‘the finish’.
